Chicken bharta

Hello folks, I wanted to make chicken bharta since a long time. I find it so versatile. One can savour this mouth-watering dish with hot roti and a bit gravy to it is a good accompaniment to steamed rice and a great fillet foe desi sandwiches and wraps. I have taken the basic recipe from Manav Mehra and tweaked a bit for a healthier version deleting the cream and butter..

For Boiling the Chicken
1 kg Chicken (with bone)
Garlic: 4 cloves
1 Small Onion cut into 4
7-8 pcs Whole Black Pepper
3-4 pcs. Cloves
1 Cinnamon stick
Salt
Water
Pressure cook the Chicken with the above ingredients. (3-4 whistles are enough)
Once done, de-bone the Chicken and cut into strips. Preserve the stock

Main Preparation
3 tbsp Oil
½ tbsp Jeera
7-8 pcs Whole Black Pepper
1 Bay leaf
1 Cinnamon stick
1 Chopped Onion
1 tbsp Ginger Paste
1 tbsp Garlic Paste
1 big chopped onion
1 Tomato Chopped
3 tbsp Almond Paste
½ tbsp Haldi Powder, Jeera Powder, Lal mirch powder, Dhaniya powder & Garam Massala each
3 tbsp yogurt
1 Boiled egg
1/2tsp kasuri methi
Salt to taste
Few chopped coriander leaves

In a pan heat 3 tbsp of oil. When the oil is hot add Shahi Jeera, Whole Black Pepper, Bay leaf, Cinnamon stick and saute for few seconds.
Then add chopped onion and salt. Cook on a medium heat till the onion turns golden brown.
Now add ginger and garlic paste, cook for 2 minutes.
Now Add the chopped tomatoes and mix well. Add ½ cup Chicken Stock and cover the pan and cook on low medium heat till the tomatoes are soft.
Meanwhile take a bowl, add Haldi Powder, Jeera Powder, Lal mirch powder, Dhaniya powder & Garam Masala and mix with water. Prepare a paste out of it.
When tomatoes are soft, pour the masala mixture and 3 tbsp yogurt and cook again for 5 minutes.
Now add in shredded chicken pieces and mix well.
Add ¾ cup chicken stock. Lower the heat and cook for at least 15-20 minutes.
Now add 3 tbsp Almond Paste and stir well.
Then add kasuri methi. Cook for another 5 minutes on very slow flame until the chicken bharta looks thick and creamy. Add the cut boiled egg as dressing and some coriander for seasoning…
